Coconut Chocolate Chunk Blondies

Wanting something sweet and a little different for the lunch boxes next week? What about an after dinner treat that won't send your insulin levels sky rocketing before bed time?

These magic Coconut Chocolate Chunk Blondies couldn't be simpler to whip up! With minimal ingredients, these fail proof blondies are going to be a made regularly for taking to share at BBQs this summer i think! 

Served warm with coconut yoghurt straight out of the oven or chill and pack for lunches or just when you need something sweet.

Ingredients:
  • 1/4 cup melted butter or coconut oil
  • 1/3 cup rice malt syrup 
  • 2 tsp vanilla essence
  • 2 eggs
  • ¼ cup almond milk
  • 1/2 cup coconut flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 200g dark chocolate chunks
Directions:
  1. Preheat oven to 180 degrees. Line a slice tray with baking paper. 
  2. Whisk together coconut oil, rice malt syrup, vanilla, eggs, and almond milk. In another bowl mix together coconut flour, baking powder, and salt. Add dry ingredients to wet and mix until no lumps.
  3. Fold in chopped chocolate.
  4. Bake for 20 minutes (it may look under cooked but it's not!).
Cool bars on a wire rack for at least 10 minutes, then cut into 12 squares.
