Raw Chocolate Brownies

Packed with hidden gems, these easy throw together brownies are a great nutrient dense treat for the kids after dinner. 
Makes: 1 slice pan
Time: 10 minutes
INGREDIENTS:
Brownie
  • 1+1/2 cup dates soaked in boiling water for 10 minutes
  • 2 cup walnuts
  • 1/2 cup cacao powder
  • 3 Tbsp hemp seeds (optional)

Icing

  • 3/4 cup cacao powder
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted

Decoration

  • 1/4 cup walnuts to sprinkle
DIRECTIONS:
1. Place walnuts in the base of a food processor and whiz until fine and flour-like.
2. Add cacao powder and hemp seeds and blend again.
3. Slowly add dates while the processor is turning, until combines and the brownies has come together. It may form a ball in the food processor, but just press it down and keep processing.
4. Spread the brownie mixture into a 20x10cm loaf pan (or a brownie pan but it will be thinner) and place in the fridge while you make the icing.
5. In a small bowl combine cocoa powder, melted coconut oil and maple syrup. Whisk until creamy.
6. Pour over the cooled base and spread evenly with the back of a knife. Sprinkle with extra walnuts and place in the fridge to cool.
Once cool, slice and eat :)
You can keep the slice in the fridge for up to a week.
